OUR FOOD PHILOSOPHY

Samuel’s cooking begins with the ingredient rather than the idea of the dish.

Seasonal vegetables, fresh seafood, handmade pasta, slow-cooked meats, open-fire dishes, olive oil, citrus, herbs, and layered acidity form the foundation of the work.

Italian, Spanish, Greek, and Levantine traditions sit at the centre of the cooking, while wider influences from the Middle East, Asia, and Samuel’s years of travel appear naturally through flavour, technique, and balance.

The goal is never complexity for its own sake.

It is food that feels vibrant, generous, soulful, and deeply satisfying. It should belong to the setting, respond to the season, and leave people feeling cared for rather than simply impressed.

A meaningful meal begins with the people, places, and systems that make it possible.

Samuel values relationships with growers, fishermen, regenerative farms, markets, and small-scale producers whose care for land and water can be felt in the ingredients themselves.

Seasonal sourcing is not treated as a trend or a performance. It is a practical way of cooking with greater integrity, using what is naturally available, wasting less, and allowing each ingredient to remain recognisable on the plate.

That responsibility is woven quietly into the work.

Meet samuel

London raised, Samuel became a professional sailor at twenty and spent years moving between Mediterranean coastlines, harbours, markets, yacht galleys, and professional kitchens.

Life at sea taught him that food is never separate from place. Weather, movement, season, and setting all influence the way people eat, gather, and feel.

Today, Samuel’s work brings together food, movement, atmosphere, and hospitality through experiences designed to help people feel more grounded, connected, and deeply taken care of.
